Cafe Rio's Cilantro Lime Sauce (my copycat version)
Café Rio Cilantro Lime Sauce My copycat version
1/2 pkg ranch dressing mix
1 cup olive oil mayo
1/2 cup milk
1 clove garlic, minced
juice from one fresh lime
1/4 -1/2 cup green salsa or tomatillo sauce
cilantro, about 1/2 of a bunch chopped
1/4 tea allspice
Tabasco sauce as needed
Literally throw everything in a blender, food processor or bowl that can be used with an emersion blender and whip it up. That's it. So easy and so delicious.
A few notes....
I only use 1/2 of the ranch dressing pack. For me using the whole package makes it too ranchy and I prefer more cilantro & limey sauce. That's just my personal preference.
I also prefer olive oil mayo and if I have the time I make my own. Again, my personal preference.
If I'm making this for company or a party, I use my blender. Placing it in a blender will really mash up the sauce and give it more of an all over green color rather than greenish with green flecks... which is what an emersion blender produces.
Tonight's sauce is for tomorrows new years party so I'm making 2 big batches. I will make one mild batch (no tabasco) and one batch with a kick (with tabasco sauce). Its nice to give your guests a choice.
Tomatillo sauce really adds a yummy earthy flavor that's to die for. If I can find tomatillo sauce or even tomatillos I will definitely try to add it to my sauce. My son isn't a huge tomatillo fan so I leave his plain (with just green salsa).
