Lemon Zest Cake Mix Cookies
(easy-peasy)


These super easy & incredibly yummy cake mix cookies never get old.  They are chewy-oooey good and the variations are endless!

Lemon Zest Cake Mix Cookies Ingredients:

1 dry cake mix (any flavor you like)
2 eggs
1/3 cup melted butter
1/2 tea vanilla
lemon zest  (optional)
Small bowl of powdered sugar to coat the individual balls of dough (also optional)

*I like to add a little lemon zest into the dry cake mix prior to adding the other ingredients.  I mix it  in real good and even use my mortar & pestle a little to really bring out the fresh lemon flavor. Again, not required but it does elevate the level of yumminess.

*Some people use oil but I prefer butter.

Add cake mix, eggs, butter (warm butter, not hot butter) and vanilla into a large bowl and mix by hand until thoroughly combined. (it will be a big chunk of sticky dough).  Let dough rest in refrigerator for at least an hour.
Roll dough into balls (any size you choose) & then roll around in your bowl of powdered sugar.  Place on a parchment lined cookie sheet allowing enough space for cookies to spread as they cook. (You can end up with some rather funky shapes if the cookies spread into each other)

*Once the cookies are rolled, covered in powdered sugar and placed on the cookie sheet, I like to pop the cookies, cookie sheet and all, into the freezer for about 10 minutes.  This keeps the cookie from spreading too much while baking.  Place in a 350 degree oven and bake for 6-8 minutes. Keep a good eye on the cookies in the last minute or two, baking them too long will result in crumbly cookies rather than ooey-gooey-chewy goodness packed cookies

White Chocolate Frosting:

2 cups heavy whipping cream
1 small package of white chocolate pudding mix (any flavor works)
1/3 cup powdered sugar

Pour heavy cream into a cold metal mixing bowl and beat on high with the whisk attachment until medium peaks form.  Slowly add pudding and powdered sugar, alternating one to the other.  This frosting will set fast so watch it close and never, ever, ever, walk away.  (yeah, been there done that.  It wasn't pretty)  If its too thick you can use a little milk to thin it but add just drops at a time.

Frost and/or fill as desired.
